Fresh Vegetable Salad - Summertime Fresh!

Fresh Vegetable Salad

Serves: 6 to 8
Ingredients
  • 4 ears yellow corn, cooked, cooled, and cut off the cob
  • 2 large tomatoes, seeded and chopped
  • 6 stalks celery, chopped
  • 1 cucumber, chopped
  • ½ red onion, finely chopped
  • ½ cup Shamrock Farms Zesty Jalapeno sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons white wine vinegar
  • ¼ teaspoon salt
  • 1 teaspoon celery seed
  • ¼ teaspoon black pepper

 Instructions
  1. In a large bowl, mix all vegetables together.
  2. In a medium bowl, whisk together sour cream, mayonnaise, vinegar, salt, celery seed, and pepper until smooth.
  3. Pour dressing over vegetables and fold until well combined. Serve immediately.
Notes
You can use regular sour cream, I used jalapeno sour cream for an extra kick. The original recipe calls for a green bell pepper as well, but my mom doesn't like the bell pepper in the salad.

Birdhouse Whimsey

From Mixed Media Birdhouses to Papered to Vintage Metal Airstream houses, a Birdhouse is about as unique as the person creating it. This gorgeous Mixed Media artful house for birds was made by Birdhouse Real Estates on Etsy. It's just so unique! Red is a color that birds really love.
This is a precious "Papered" Birdhouse with tiny roses made out of paper as well. More of a decorative house for birds, it would look so pretty sitting on a Bay Window seat, or in your kitchen nook. The Bohemian Style

In modern times, Bohemian style would mean people who live unconventional, usually artistic lives. The original Bohemians were were travelers or refugees from central Europe. This style has been adapted to fit the decades. Now, you see Bohemian and think Artsy, with Jewelry - usually Artisan jewelry, Big bulky belts, Feathers, strands of Jewels adorning the neckline, long flowing skirts and shirts, peasant blouses, and can even translate to lace pieces and of course, hats.
We call this style today the "Boho Chic" - meaning, fun, flirty, often romantic, and always carefree. The "Gypsy" girl, the allure of a more individual or extension of self kind of style. It's unique to each woman.

Southwestern Avocado Salad Dressing

Ingredients:

1 ripe avocado
1 cup buttermilk
1/4 cup cilantro
juice of 1/2 lime
1 teaspoon ranch seasoning powder (homemade or storebought)
1/2 teaspoon garlic powder
1/2 teaspoon chipotle chili powder
1/2 teaspoon salt

Directions:

Slice the avocado in half, remove the pit, and scoop the flesh from the skin. Add to a blender along with all of the other ingredients. Blend together until smooth and creamy. Refrigerate for one hour before serving.
Keeps in the fridge for 3 days.

Of Peony and Summertime

Peony - Named after Paeon, a student of Asclepius, the Greek God of medicine and healing. When Asclepius became jealous of his pupil, Zeus saved Paeon from his wrath by turning him into the Peony flower. The Peony is among the longest-used flowers in Eastern culture and is one of the smallest living creature emblems in China. Along with the plum blossom, it's a traditional floral symbol of China. It is also known as "flower of riches and honour" or "king of the flowers", and is used symbolically in Chinese art. Oh, and Renoir painted peony as well in some his very famous works.

What is your favorite flower? I do believe that Peony with greenery and ivy wrapped in brown paper bags would be a special treat to receive - and wouldn't the ruffled lovelies look great at a dinner setting? Romantic as well, they are perfect for Valentine's or Birthday gifts. Yes, Peony are truly a special flower!
